Team Health Warrior p/b RK&O is proud to introduce Nobletree Coffee as one of its key sponsors for the 2015 season. Based in Red Hook (Brooklyn) Nobletree is the first coffee company to introduce the concept of farm-to-table: in order to provide the best quality product to its customers, Nobletree is built on the idea of full ownership and oversight over each step in the value chain. The process begins with the cultivation or procurement of the best berries from exceptional terroirs. At the optimal time, the coffee berries are picked, dried, and milled before being sent on their journey to Brooklyn. Green beans arrive at the Red Hook roasting facility where a series of tasting tests are performed to determine the ideal roasting conditions. Once roasted and packed, Nobletree coffee is immediately dispatched to customers or baristas, arriving fresh and ready to be brewed for the perfect cup of coffee.

It begins on the farm and ends far away in your cup. There are many small stops along the way, each one equally important, all combining to make the very first sip as memorable as possible. We begin on the farm, in the nursery, choosing seeds and cultivars. Coffee attributes are predicated on the terroir, including altitude, makeup of the soil, amount of sun and rain, every element of the microclimate. Next stop on our journey is the harvest. Part of this expedition is knowing the optimal time to pick the berries by hand, then understanding the finer points of drying and milling. When we arrive at the roasting station there are decisions: at what temperature should we roast? For how long? On which roaster? The answers to each may send us in a new direction. The finished roast brings us to the grinder and choice of brewing method. Finer or coarser? More or less water? ABOUT TEAM HEALTH WARRIOR P/B RK&O Team Sixcycle, the entity behind Team Health Warrior p/b RK&O was founded in 2011 and has been part of the New York City cycling community ever since. The team is part of the Century Road Club Association (CRCA), one of the oldest and largest cycling organizations in the United States, with Team Sixcycle racers serving on the CRCA Board in every year since the team was founded.
